Quick Cookie Baking

I have always enjoyed baking all sorts of cookies, but have found the time investment of taking pan after pan out of the oven to be a bit too much now that I have my little one joining me in the kitchen. I spent a lot of time brainstorming and trying various ideas, in hopes of finding one that would make cookie baking a joy rather than a chore. I tried placing an extra row of cookies on the sheet. I tried adjusting my oven racks and baking two sheets of cookies at a time. I tried a few other ideas, but all of these made for cookies that were burned or not correct in some other way.
After all of these trials and error, I came across a wonderful tip in my Cook's Country magazine. A reader wrote to the editor with the suggestion of wrapping your oven rack in several layers of aluminum foil and using that as one big, huge cookie sheet. Using the largest cookie sheet my oven could hold has worked out very well. Rather than needing an hour or more to get a whole batch of goodies baked, I can now bake an entire recipe worth of cookies in two oven sessions! This is an excellent improvement and once again makes baking a pleasure. :o)

Thanks for participating! What a unique tip! My oven has two racks. So, would I cover both with foil, and bake at separate times, or just remove the cookies from one rack and put more on? I hate making cookies (though I love to eat them!) and at first (from the picture you used!) I thought you were going to say "Make biscotti instead"! ;) LOL

lol! I was trying to write this post before my daughter woke up from her morning nap and wound up using the first picture I found while searching for "cookie" on Allposter. Hmmm...maybe I should try making biscotti to see if that might be a time saving cookie making adventure :o)
