Storing Fresh Herbs


I love cooking with fresh herbs and usually have an herb garden growing, either inside or out. When this is not possible, fresh herbs from the farmer's market or grocer are purchased. As easy as herbs are to procure and use in cooking, they can be a bit difficult to keep fresh and ready to use. These two methods below have allowed me to get the most use from my fresh herbs.

Vase Method
When you are planning to use quite a bit of a certain herb during the week, you can place your bunch of herbs in a vase, just as you would flowers. Snip the ends of the herbs and fill the vase with cold water, changing every few days. Storing herbs this way should keep them super fresh for a good week.

Freezer Method
To store fresh herbs in the freezer, you first need to wash the most healthy looking leaves and pat them dry with a paper towel. Next place the herbs in a single layer across a cookie sheet ands freeze for about an hour. Once frozen solid, place the herbs in an airtight container and return to freezer. When ready to use, simply remove your amount of herb and place right in your dish. No thawing needed.

Very helpful - thank you! Have you ever read the old Gene Stratton Porter book "The Harvester"? It's an excellent old Christian romance novel about a man who harvests herbs for a living. You would love it!! Makes me want an herb farm. LOL You learn a ton about herbs and old herbal medicinal remedies from it.

I always love your kitchen tips! In the old apartment, I grew herbs in pots and just picked what I needed for cooking. Here I haven't had a chance to do that yet. Hopefully soon - but in the meantime, your tips will be very helpful.
